LOWFAT BUTTERMILK PANCAKES 
1/2 c. white flour
1/4 c. wheat flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. buttermilk (may substitute 1/2 c. nonfat yogurt)
1/4 to 1/2 c. skim milk
1 egg white
2 tsp. olive oil (optional)

Combine flours, baking powder and baking soda. Mix in buttermilk and skim milk, egg white and oil. Don't overmix. Lightly grease hot skillet with butter and cook pancakes.
