MELT IN YOUR MOUTH BUTTERMILK
PANCAKES
 
1 1/3 c. flour, sifted
1/4 tsp. salt
3/4 tsp. baking soda
1 1/3 c. buttermilk
1 egg, beaten
3 tbsp. butter, melted

Sift the flour and salt together. Combine the soda and buttermilk. Add to the dry ingredients and mix well. Stir in the egg and butter. If you want an even lighter pancake, beat the egg white until it hold peaks and fold in gently at the very last. Bake the cakes on a hot griddle.
