BUTTERMILK PANCAKES 
1 c. all-purpose flour
1 tbsp. sugar
1 egg
1 tbsp. vegetable oil
1 tsp. baking soda
1/2 tsp. salt
1 c. plus 2 tbsp. buttermilk

Combine first 4 ingredients. Combine egg, buttermilk, oil; slowly stir in dry ingredients. For each pancake pour 1/4 cup batter onto hot griddle. Turn pancakes when tops are covered with bubbles and edges are browned. Yields: 8 (4 inch) pancakes.
