LIGHT AS AIR BUTTERMILK PANCAKES 
1 egg, separated
1 c. buttermilk
1 c. flour
1 tsp. baking soda
Pinch of salt

Sift together flour, baking soda and salt; set aside. Beat egg yolk with a fork. Add buttermilk to egg yolk and beat again with fork. Add liquid to flour mixture. Beat egg white until it peaks and fold into batter.
