FRUIT AND CARROT CONSERVE 
3 c. sugar
2 c. chopped, peeled apples
1 c. chopped, peeled pears
1 c. finely shredded carrots
2 tbsp. lemon juice
3/4 c. apple juice
3 oz. pkg. peach-flavor gelatin

In large saucepan, combine sugar, apples, pears, and carrots. Stir in apple juice and lemon juice. Bring to boil over medium heat; boil 10 minutes, stirring occasionally. Remove from heat. Add gelatin; stir 1 minute. Ladle hot mixture into 4 clean 8 ounce jelly jars or moisture-vaporproof freezer containers, leaving 1/2 inch head space. Cool slightly; cover with tight fitting lids. Refrigerate at least 24 hours. Store conserve in refrigerator up to 3 weeks or in freezer up to 3 months.
