POTATO PANCAKES 
2 c. coarsely grated potatoes
1/4 c. milk
1 egg, well beaten
2 tbsp. flour
1 sm. coarsely grated onion
1 tsp. salt
1 tsp. parsley flakes

Add potato to milk and egg. Stir, and add remaining ingredients. Mix well and fry in small cakes on a hot greased griddle until brown and crisp on one side, turn and do the other. Serve very hot with butter and salt. Makes about 12 cakes.
