STUFFED ZUCCHINI 
1 med. size zucchini
1/2 c. Parmesan cheese
1 c. pulp from zucchini
1 sm. hot pepper
1 jar Italian cooking sauce
1 tsp. minced garlic
2 eggs
1 tomato, chopped
1 to 1 1/2 lb. ground beef

Cut the zucchini in half lengthwise and remove the pulp saving 1 cup then set aside.

In a mixing bowl mix together meat, cheese, pulp, eggs, pepper, tomato and garlic. Then stuff both halves of your zucchini and pour cooking sauce over the top. Place in preheated 350 degree oven for about 2 hours. To serve slice down through meat and zucchini and enjoy.
