This is a simply marvelous salad and is very festive during the holidays. The tangy celery seed dressing is the perfect complement for the fruit and spinach. Serve this salad when you have a standing rib roast during the holidays or for a special dinner party. 2 oranges, peeled & sectioned 1 pt. fresh strawberries, washed & hulled

CELERY SEED DRESSING:

1/2 med. onion
1/4 c. sugar
1/2 c. vegetable oil
2 tsp. Dijon mustard
1 tsp. celery seed
Salt & pepper to taste

Place all ingredients in a blender or food processor and pulse until smooth.

Toss the spinach leaves with approximately 1/2 cup of the celery seed dressing. Lightly toss the orange sections and strawberries with approximately 3 tablespoons of the dressing. Refrigerate the remaining dressing for future use. Arrange spinach leaves on salad plates. Arrange orange slices in a pinwheel pattern atop spinach leaves, and place several of the strawberries in the middle of the salad. Serves 4.
