SCOTCH OATCAKES 
1 1/2 c. quick rolled oats
1/4 c. sugar
1 1/2 c. flour (scant)
1/4 tsp. salt
1 tsp. baking powder
1/2 c. butter
1 egg, beaten
2 tbsp. water

Combine dry ingredients and cut in butter as for pastry. Mix egg and water and work into first mixture. Place dough on greased cookie sheet and roll out very thin. With knife score in 2 inch squares. Bake at 375 degrees for 12 minutes. Serve with meals in place of bread.
