SCOTCH OATMEAL COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs, well beaten
3 c. oatmeal
1 1/2 c. flour (or more)
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1/2 c. nuts (walnuts or sunflower nuts)

Drop by teaspoonfuls and bake at 375 degrees until delicate brown.
