LEMON MERINGUE PIE | |
1 1/2 c. sugar 2 tbsp. cornstarch 1/4 c. flour 1/4 tsp. salt 2 c. boiling water 3 eggs, separated 2 tsp. lemon rind 8 tbsp. lemon juice 2 tbsp. butter 1 baked pie shell 6 tbsp. powdered sugar Combine sugar, cornstarch, flour and salt. Gradually stir in boiling water and cook 15 minutes, stirring constantly until mixture thickens. Mix together slightly beaten egg yolks, lemon rind and juice. Add to thickened sugar-water mixture and cook 2 minutes, stirring constantly. Add butter. When slightly cool, pour into baked shell. Cover with meringue made by gradually beating powdered sugar into stiffly beaten egg whites. Bake 15 minutes at 325°F. |
