SPINACH CHEESE PIE 
9" pie shell
10 oz. pkg. frozen spinach
3 tbsp. butter
1 tbsp. flour
1/2 c. heavy cream
1 c. grated Monterey Jack or Mozzarella cheese
Salt & pepper

Bake the pie shell.

Cook the spinach and drain it.

Preheat oven to 350 degrees.

In a medium saucepan, melt the butter over medium heat. Gradually stir in flour. When it thickens, stir in cream. Add 1/2 cup of cheese and stir until it is melted. Fold in spinach, salt and pepper. Pour into pie shell. Sprinkle the top with the remaining cheese. Bake for 10 to 15 minutes.
