HERMAN STARTER
2 c. flour
2 c. warm water
1/4 c. sugar
1 env. yeast

Mix flour, water, sugar and yeast together in plastic or glass container and let stand overnight in a warm place with a lid on, but do not cover tightly. Refrigerate, covered, but stir each day. On the 5th day, feed with 1 cup flour, 1 cup milk and 1/2 cup sugar. The starter also should be fed the same ingredients on the 10th day after taking out the 2 cups to be used in baking. On the 10th day you can bake. Measure out 1 cup Herman to give to a friend. This will leave 2 cups to use in a recipe and another to continue to feed for another recipe in 10 more days. Remember, the 10th and the 1st day are the same. IMPORTANT: If Herman isn't used on the 10th day, add 1 teaspoon sugar and repeat every 10 days until you do use some.
