TAMALE CASSEROLE 
2 c. sliced onions
3 tbsp. bacon fat
3/4 c. chopped green pepper
6 oz. sliced mushrooms
1 lb. ground beef
2 tbsp. flour
4 tsp. chili powder
2 tsp. salt
1 tsp. sugar
12 oz. can corn
16 oz. can tomatoes
1 pkg. corn muffin mix

Saute onions in fat in large skillet until tender. Add green pepper, mushrooms and ground beef and saute until meat is brown. Blend flour with meat mixture. Add rest of seasonings. Mix in corn and tomatoes. Bake at 350 degrees for 30 minutes in a 12 x 7 1/2 x 11 1/2 inch baking dish.

Meanwhile, prepare the muffin mix according to package directions. Spoon the muffin mix over the tamale mixture. Turn oven to 400 degrees and bake another 20 to 25 minutes or until corn muffin topping is browned and baked through. Serves 6 to 8.
