ORANGE COCONUT CRISPS 
1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
1 tbsp. grated orange rind
2 1/2 c. sifted all purpose flour
1/4 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1/4 c. orange juice
2 boxes (4 oz.) each shredded coconut

Cream butter and sugar until fluffy. Beat in eggs, vanilla and orange rind. Sift flour with soda, baking powder and salt. Add half the flour mixture, blending well. Add orange juice. Blend in remaining flour. Spread coconut on wax paper or in shallow pan. Drop cookie dough (it will be soft) by teaspoonfuls on coconut. Roll in coconut, coating generously. Place cookies 1 1/2 inches apart on greased cookie sheets; bake at 375 degrees for 15 minutes. Makes about 5 dozen.
