CRISP COCONUT OATIES 
1 tsp. vanilla
1/2 c. softened butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg beaten
1 tsp. coconut flavoring
1 c. flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. flaked coconut
1 c. quick rolled oats
1 c. rice cereal

In a large bowl, cream butter and sugars. When light and fluffy, stir in egg, vanilla, and coconut flavoring; beat well and set aside. Sift flour together with salt, baking powder, and baking soda. Stir this mixture into the butter-sugar mix. Blend the two well, then stir in coconut, oats, and rice cereal.

Roll into 1 or 1 1/2 inch balls. Place on greased cookie sheet about 2 inches apart. Bake at 325 degrees for 12 minutes or golden brown. Yield 3 1/2 to 4 dozen.
