APRICOT SQUARES 
1 c. sugar
2 c. plus 1 tbsp. sifted flour
3/4 c. butter (1 1/2 sticks)
1 1/3 c. flaked coconut
1/4 c. chopped walnuts
1 egg
1 tsp. vanilla
1/4 tsp. salt
1 (9 oz.) jar apricot jam

Cream butter. Add egg and vanilla and remainder of ingredients, except jam. Mixture will be stiff. Grease 9 inch square pan. Take half of mixture and pat firmly into pan, and cover to within 1/4 inch of edge with jam. Cover with remaining mixture. Bake at 350 degrees for 35-40 minutes.
