MARY BETH'S MANNICOTTI | |
1 pkg. Mannicotti noodles 1 (16 oz.) cottage cheese 1/2 tsp. garlic powder 3 tbsp. minced onion 1/4 c. Parmesan cheese 1 (10 oz.) pkg. frozen chopped spinach 1 c. grated Mozzarella cheese 1 egg, beaten 1 (28 oz.) jar spaghetti or pasta sauce of choice Thaw and drain spinach. Prepare Mannicotti noodles according to package instructions. In a bowl, combine cottage cheese, garlic powder, onion, Parmesan cheese, Mozzarella cheese, and beaten egg. Fold in thawed and drained spinach (do not cook). Stuff Mannicotti (large shells do just as well) with cheese/spinach mixture. Place stuffed Mannicotti in 9 x 13 inch baking dish. Barely cover bottom with sauce to prevent sticking. Pour remainder of sauce over and add more cheese on top if desired. Make ahead. Freezes great! Bake at 350 degrees for 45 minutes. |
