WHITE CUT CHICKEN 
1 whole fryer chicken (3-4 lb.)
1 tbsp. salt
2 scallions, cut into 2" lengths
1 slice fresh ginger (1x1/8")

Bring 2 quarts of water (or enough to completely cover chicken) to a boil in a 4 quart saucepan. Add salt, scallions and ginger. Submerge chicken in the boiling water and return to a boil. Cover and cook on medium-high heat for 20 minutes. Turn off flame but do not remove cover. Allow chicken to rest in liquid for 20 minutes. Remove chicken. Cool to lukewarm. Cut into bite-size (1 x 2 inches). Serve in platter with soy sauce for dipping.
