CHOCOLATE CHIP COOKIES | |
2 1/4 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 2 sticks unsalted butter, room temperature 1/2 cup brown sugar 1 cup white sugar 2 large eggs 1 1/2 tsp. vanilla extract 2 to 2 1/2 cups semi-sweet chocolate chips 1 cup chopped walnuts, pecans or sunflower seeds 1/2 cup peanut butterscotch chips Sift flour, baking soda, and salt together in a mixing bowl or on a sheet of parchment paper. Set aside. Note: Butter should not be too soft or oily - it should be cold enough still so that you can beat in some air to make it fluffy. Combine butter, brown sugar and white sugar in a separate bowl and beat until light and fluffy, gradually adding the white sugar last. Add eggs, beating for 30 seconds after each addition, scraping down sides occasionally. Beat in vanilla. Pour or sift in the flour mixture and stir (a wooden spoon works best). For tender cookies, don't beat the mixture - just stir. Gradually add the nuts and chips while stirring. Refrigerate for up to 2 days. (It's best to make the dough a day ahead so the dough has a chance to hydrate - this makes the cookies easier to handle without the need to add more flour). Preheat oven to 375°F. Line cookie sheets with parchment or silicone baking sheets. Drop by rounded cookie scoop onto pan 2 1/2 inches apart. (Some people like to roll them into a ball.) Every oven bakes differently, and as your baking session goes along, your cookies will bake more quickly, so watch the cookies carefully as they bake. (We underbake slightly because they continue baking for a short time after being removed from the oven). Cookies take around 9-12 minutes to bake, depending on their size. Makes 6 dozen cookies. Variations: Limitless! Substitute some of the chips with dried fruits (Craisins, raisins, chopped dates, etc.), change out the walnuts/pecans with Macadamia nuts or chopped hazelnuts, add some M&M'S® baking bits, toss in some Alpen granola or other crunchy bits of cereal.
