MATADOR SALAD 
8 c. mixed salad greens
1/2 c. grated American cheese
1/2 c. kidney beans
8 whole pitted ripe olives
8 halved cherry tomatoes
2 sliced avocados
4 chopped hard cooked eggs
4 tsp. Parmesan cheese

MEAT:

3 tbsp. oil
1 lb. ground chuck
1/2 c. finely chopped onion
2 tbsp. flour
1 tsp. ground cumino
1/2 tsp. salt
3/4 c. red taco sauce (hot)
1/2 tsp. garlic powder

Place mixed greens in serving bowl. Arrange American cheese, beans, olives, tomatoes, avocados, eggs and Parmesan cheese. Then place the meat on top. Toss and serve with Italian dressing.

Brown meat well in oil. Add onions, cook for 5 minutes. Add flour, cook for 5 minutes, then add all other ingredients. Cook for 10 minutes. Meat can be served on salad hot or cold. Makes 4 to 6 servings.
