OATMEAL CAKE 
1 1/4 c. boiling water
1 c. oatmeal
1 stick butter
1 c. white sugar
1 c. brown sugar
2 beaten eggs
1 tsp. vanilla
1 1/3 c. flour
1 tsp. salt
1 tsp. baking soda

Combine water, oatmeal and butter; cover and let stand 20 minutes without stirring. Add white and brown sugars to the oatmeal mixture. Stir. Add beaten eggs, vanilla and flour, salt and soda. Mix very well. Bake in 9 x 13 inch sheet pan for 35 minutes at 350 degrees. Top with broiled icing while cake is still hot from the oven.

BROILED ICING FOR OATMEAL CAKE:

1 c. brown sugar
1 c. coconut
1 c. chopped nuts
1/2 stick butter
1/2 c. evaporated milk or cream

Soften butter to room temperature. Combine all ingredients; stir well. Spread over hot oatmeal cake. Place iced cake under broiler for no longer than 2 minutes. Cake is very rich, cut in small square pieces to serve.
