CRANBERRY CORNISH HENS 
1 c. jellied cranberry sauce
1/2 c. dry white wine
1 tbsp. plus 1 tsp. lemon juice
2 Cornish hens
Salt

Combine sauce, wine and lemon juice. Cook until melted and mixture is smooth. Keep warm. Rinse hens. Pat dry, salt, truss and brush with sauce. Place breast side up in lightly greased shallow pan. Bake at 350 degrees for 1 1/4 to 1 1/2 hours. Baste frequently. Serves 2.
