SALSA 
5 qts. tomatoes, peeled, in 3/4 - 1 inch chunks
2 1/2 c. vinegar
3 lg. very lg. (softball size) onions, coarsely chopped
Plus or minus 9 any kind peppers
Plus or minus 11 anaheim peppers
Plus or minus 17 jalapenos
3 tbsp. garlic powder
1 tbsp. salt

Reduce in heavy pot(s) to desired thickness.

Add 2 teaspoons lemon juice to each pint jar.

Process at 5 pounds pressure for 10 minutes. Makes plus or minus 8 pints. Plus or minus 3 weeks refrigerator life after opening.
