SOPAIPILLA 
1 3/4 c. flour
2 tsp. baking powder
1 tbsp. sugar
1 tsp. salt
2 tbsp. shortening
2/3 c. milk
2 c. cooking oil
Honey

Combine flour, baking powder, sugar and salt in a large bowl. Cut in shortening until mixture resembles corn meal. Add milk and mix. Turn onto floured surface and knead gently, about 1 minute. Cover dough, let rest 1 hour. Roll into a 12 x 15 inch rectangle. Cut into 3 inch squares. Heat oil. Drop a few at a time into the oil, turning at once so they puff. When down, drain on paper towel. Serve hot with honey or cinnamon and sugar. Yields about 20 servings.
