HUNGARIAN ROAST DUCK 
2 lg. ducks (2 to 2 1/2 lb. each)
Salt and pepper
2 apples, quartered, peels on
6 slices bacon
3 c. sauerkraut
2 slices crisp, cooked bacon, crumbled
1 clove garlic, split
2 tbsp. paprika
2 onions, quartered
1 stick butter, melted
2 tsp. caraway seed

Rub ducks skin with the garlic and sprinkle birds inside and out with salt, pepper and paprika. Fill the cavities with the apples and onion. Cover breasts with bacon slices and place birds, breasts up, in roasting pan. Bake at 350 degrees for 1 hour or until done to taste.
