ZUCCHINI IMPERIAL 
4 c. sliced zucchini
2 beaten eggs
1 c. mayonnaise
1 c. Parmesan cheese
1 c. chopped onion
1/4 c. chopped green pepper
Bread crumbs
butter

Parboil zucchini in 2 cups of water for 2 or 3 minutes. Drain. Mix first 6 ingredients and pour into a rectangular baking pan (7 1/2 x 11 inches) or low casserole. Cover with crumbs and butter. Bake at 350 degrees for 1/2 hour. Try this one even if you don't like zucchini - it is superb!
