CHEESE LOG ROLL 
(This is especially pretty at Christmas because the nuts have red and green skins.)

6 oz. (each) softened cream cheese, shredded cheddar cheese, shredded Swiss cheese
3 oz. Roquefort cheese
1/8 tsp. ground cayenne pepper
3 tbsp. (each) chopped black olives, white wine
28 round Ritz crackers
2/3 c. pistachio nuts, chopped fine

Mix first 5 ingredients, then mix in olives and wine; keep aside 1 cup of this mixture; spread rest on crackers. In tin foil, form a roll of 2 rows together and again on top; with other cup, cover the whole thing, then roll in pistachio nuts.
