BAY ROASTED POTATOES 
4 bay leaves
3 tbsp. butter
Salt and pepper
2 lbs. boiling potatoes, about 6
Other spices may be used oregano, thyme, etc.

Heat oven to 375 degrees. Break the bay leaves into pieces and put in a roasting pan with the butter, 1 teaspoon salt and 1/4 teaspoon pepper. Put in the oven just long enough to melt the butter. Peel the potatoes and cut them into chunks. Toss the potatoes with the melted butter to coat. Cover the pan tightly with foil and bake 30 minutes. Remove the foil and continue baking, stirring occasionally, until the potatoes are crisp and well browned, about 30 minutes longer. Makes 4 servings.
