PEPPERMINT PINWHEELS 
2 c. all purpose flour
1/2 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. mint extract
Red food coloring
1/2 tsp. salt
3/4 c. sugar
3/4 c. butter (1 1/2 sticks)
1 egg yolk

Sift flour, baking powder and salt together. In a large bowl, beat butter with sugar until fluffy and light; beat in egg yolk and vanilla. Stir in flour mixture, a third at a time, blending well after each addition, to form a soft dough. Divide dough in half, and to half add the mint extract and enough red coloring to tint the dough deep pink.

Roll out each color dough to a 16 x 10 inch rectangle between sheets of wax paper. Remove top sheet of wax paper from pink dough; place dough atop plain dough; peel off paper. Roll up dough TIGHTLY, jelly roll fashion. Wrap in wax paper; chill several hours until firm. (Or you may freeze dough and take out of freezer half an hour before cutting and baking.) When ready to bake, unwrap dough and cut into 1/4 inch thick slices with sharp knife. Place on ungreased cookie sheets. Bake at 350 degrees for 10 minutes or until firm, but NOT brown. Remove to wire racks to cool completely. Makes 5 dozen.
