PEPPERMINT PATTIES 
1 c. mashed potatoes
7 c. powdered (10X) sugar
1 tsp. salt
2 tbsp. melted butter
2 tsp. peppermint extract
8 (1 oz.) sq. semi sweet chocolate
2 tbsp. shortening

Cream potatoes, sugar, salt, butter and peppermint extract. Knead slightly. Roll into cherry size balls; use extra sugar, if needed, to roll. Flatten; dry overnight.

Melt chocolate and shortening in double boiler. Mix well. Keep over hot water. Do not allow water to boil. Dip patty. Let cool on wax paper.
