BROCCOLI CASSEROLE 
2 bunches broccoli
8 oz. Velveeta cheese
1 can condensed cream of chicken soup
1 1/2 can milk
1 box light salted Ritz crackers
Salt and pepper to taste

Steam broccoli and dice; prepare soup with milk, add cheese and cook until cheese is completely melted on low heat. Crush 2 rolls of crackers; then combine broccoli, soup mixture and cracker in casserole dish; crush another roll of crackers and sprinkle on top. Bake for 20 minutes on 325 degrees until crust is golden brown. Serves 8.
