CHICKEN BROCCOLI CORDON BLEU 
1 lb. chicken breasts, boned & skinned
4 (1 oz. each) ham slices, thin & fully cooked
4 (1 oz. each) Swiss cheese slices, thin
2 tsp. vegetable oil
1 (10 oz.) can cream of broccoli soup, condensed
1/3 c. milk
1/4 c. sliced green onion
1/8 tsp. thyme, dried crushed leaves

Place chicken between 2 pieces of plastic wrap. Pound chicken to 1/4 inch thickness. Place ham and cheese slices on each chicken breast half. Roll up chicken from narrow end, jelly roll fashion. Tuck in ham and cheese if necessary; secure with wooden toothpicks.

In a skillet over medium heat, brown chicken on all sides in vegetable oil. Stir in soup, milk, green onions and thyme. Heat to boiling. Reduce heat to low. Cover and simmer 10 minutes or until chicken is tender and juices run clear. Makes 4 servings.
