BEAN SOUP 
2 c. mixed dry beans of choice
2 tbsp. salt
2 qts. water
Ham meat or ham hocks
1 lg. onion, chopped
1 can tomatoes
1 tsp. chili powder
Juice of 1 lemon
Salt and pepper

Wash the beans, place in large kettle with 2 tablespoons salt and soak overnight. Drain in morning. Add 2 quarts water, and ham meat or ham hocks. Bring to a boil and simmer 2 hours. Add the chopped onion and can of tomatoes. Season with chili powder, juice of the lemon and salt and pepper.

Remove ham hock or cut up ham and return to kettle. Simmer slowly one hour.
