JULIE'S SALMON WITH MANGO SALSA 
Great served with rice!

5 frozen (or fresh) salmon fillets
salt and pepper, to taste
2 (or more) cups homemade or store bought mango salsa
3 tbsp. butter
4 cups lukewarm water
1/2 cup lemon or lime juice
10 tbsp. bread crumbs

YOU'LL ALSO NEED:

a large skillet
a small bowl
a large bowl
2 cookie sheets
a pancake turner
a cookie cooling rack
a spoon

Get a large skillet and set it on low and toss in butter. While that melts mix the water and lemon juice in a large bowl. Set the bread crumbs is a small bowl and get out a cookie sheet. Take the salmon (if frozen thaw) and set it in the bowl with the water and juice. Dip each in for about 5 seconds. Set on the cookie sheet next to the bread crumbs. Take a spoon and lightly cover each salmon with the bread crumbs, flip over and repeat.

Once butter melts turn the skillet on HIGH and set the salmon in. After about 4 minutes flip. After another 4 minutes remove salmon and set on a cooling rack on top of the other cookie sheet to let the extra butter drip off.

Set on a serving plate and top each with desired amount of salsa.
