BASIC WHITE SAUCE 
1 tbsp. butter
1 tbsp. flour
1 c. warm milk

MEDIUM:

2 tbsp. butter
2 tbsp. flour
1 c. warm milk

THICK:

3 tbsp. butter
3 tbsp. flour
1 c. warm milk

Melt shortening. Add flour and stir until smooth. Add warm liquid, stirring constantly. Bring to a boil, reduce heat and simmer about 5 minutes. Add seasonings.
