RICOTTA RICE PIE 
1 c. cooked rice
3 lbs. Ricotta cheese
6 eggs
1 c. sugar
1 tsp. vanilla

Blend together. Pour in oblong pyrex dish. Bake at 350 degrees for 1 hour or a little more.

Make sure the pie is not soft in the center.

After 1 hour, turn off oven and let set with oven door opened a little.

When cool cut into squares.

Great for small dinner party (10-12 people).
