BATTER FOR FRENCH FRIED CHICKEN
OR ONION RINGS
 
1 egg
1 c. milk
1 c. flour
1/4 tsp. each onion and garlic powder (optional)
1 tsp. baking powder
1 1/2 tsp. sugar
1 tsp. salt

Beat egg and stir in milk. Add sifted dry ingredients and beat until smooth. Dip chicken or onion rings in batter. Fry in deep fat heated to 365°F. Cook meaty pieces first for 15 minutes. Fry backs and wings about 13 minutes. Drain on paper towels.

This recipe is great if you like fluffy breadding, but I have made an important adjustment: double dip the chicken, and add dried breadcrumbs to the flour during the second dip. So, dredge in seasoned flour first, then coat in the wet batter, then dredge in seasoned flour/ breadcrumb mix and fry. This will give you that "KFC crumble."

Awesome recipe. Like others I added more spices including a couple of dashes of Tony Chachere's spice mix. It's the only homemade chicken strips my kid actually liked and ate! I even had enough batter to make onion rings which were also fantastic.

This was quick and easy. I had all of the ingredients needed already in my cupboard. I also added a little more flour to thicken up the batter and 1/4 tsp of paprika and BAM! Tastes great! Thank you for the recipe.

This was a great recipe. It's now a family favorite! Make sure to dredge the chicken in flour first. I also add a lot more onion and garlic powder than is called for, and a little more sugar too. I don't take the temperature of the oil, but it is best to do it first on medium high for a minute on each side, then turn to low.

I haven't tried onion rings yet but this batter only seems to be for onion rings. The chicken I fried didn't look like normal fried chicken and it didn't have the great fried chicken taste. I will definitely try this for onion rings though.

I have a feeling that this recipe would be better with only 1/2 cup of milk. I also added extra flour, but it wasn't enough to really coat the chicken, even having patted it dry and dredging it before dipping in the batter. I also made sweet potato fries with the batter, but my oil was too hot, so the batter burned before the fries were cooked through. Overall, with a little trial and error, I think this will be a go-to recipe for me. Thanks for sharing!

Not bad. Chicken almost came out looking like Chinese takeout chicken fingers. I'd definitely recommend dredging in flour though. Served to 2 picky eaters who absolutely loved it.
