MICROWAVE ZUCCHINI CASSEROLE 
4 med. zucchini, sliced 1/4-inch thick
2 med. onions, sliced and separated into rings
4 stalks celery, finely chopped
1 c. green pepper, chopped
1 clove garlic, finely chopped or sliced
1/4 tsp. oregano
1/8 tsp. pepper
1/4 c. grated cheese (Parmesan or Romano)
1 (15 oz.) can tomato sauce
1/2 tsp. salt

Combine and mix well all ingredients except cheese in 2-quart casserole. Cover with a lid. Cook at medium for approximately 20 minutes, stirring twice. Let stand, covered, for an additional 5 minutes. Before serving, top with grated cheese. Time is for a 700 watt oven and will be different for smaller ovens. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
