3 eggs 1/2 c. water 3/4 c. flour 1/4 tsp. salt 2 tbsp. melted butter FILLING: 2 lbs. pot cheese 1/2 lb. cream cheese 2 eggs 2 tsp. vanilla 1/2 - 3/4 c. sugar Blend batter ingredients in blender. Lightly grease 8 inch fry pan. Put 2 tbsp. batter. Fry on one side. Turn out on waxed paper; fried side down. Prepare filling. Combine all ingredients. Put one heaping tablespoon in each blintze leaf. Roll up and tuck sides under. Fry until golden. Serve with sour cream. Blintzes may be frozen before fried. |
