KIELBASA & POTATOES 
8 slices thick-sliced bacon, diced
2 lg. onions, chopped
6 lg. potatoes, cooked, peeled & cubed
1 polish kielbasa or 2 lbs. Italian sweet sausage-optional
2 red bell peppers, cubed, diced in 1 inch cubes
Salt & pepper

In large skillet, fry bacon until brown and crisp. Set aside out of pan. Add onion and brown. Add potatoes and stir over low heat until lightly browned for 15 minutes. Cook kielbasa in boiling salted water for 15 minutes. Drain and cut into 1/2 inch slices. (If using Italian sausage brown on all sides in second pan (1 inch slices). Add kielbasa or sausage to pots. Add peppers and stir over low heat 10 minutes. Season to taste. Pile on serving platter and sprinkle with crisp bacon. Serve with: marinated cucumber slices; dark bread and cold beer.
