CASHEW CHICKEN 
4 halves or 2 whole chicken breasts
Water to cover
3 tbsp. soy sauce
1/2 tsp. garlic salt
1/2 tsp. sugar
Green onions
1/2 to 3/4 c. cashew nuts
Cooked rice

Cut chicken into bite-size pieces and soak in the next 4 ingredients for 30 minutes. Drain. Dip in beaten egg, roll in cornstarch or flour. Fry in medium to hot oil until lightly browned. Set out on plate.

Make gravy from 1 1/2 cups water, 2 teaspoons cornstarch, 3 teaspoons soy sauce, salt, garlic salt, and celery salt (optional), and part of grease. Heat and stir until it is clear gravy. Return meat and add nuts. Serve over hot cooked rice, topped with chopped green onions.
