TEX-MEX MEAT LOAF 
1 egg white, slightly beaten
1 c. soft bread crumbs
1 (14 1/2 oz.) can tomatoes, drained and cut up
1 (4 oz.) can diced green chili peppers, drained
1/2 c. chopped pitted ripe olives
1/4 c. onion
2 cloves minced garlic
1/2 tsp. ground cumin
1/2 tsp. pepper
1 1/2 lbs. lean ground beef or ground turkey
1/2 to 3/4 c. shredded low-fat Cheddar cheese

Combine: egg whites, bread crumbs, tomatoes, chili pepper, olives, onion, garlic, cumin. Add salt and pepper, beef; mix well. Pat mixture into a loaf pan. Bake at 350 degrees for 50 to 60 minutes. Transfer to platter, top with cheese.
