VEGETABLE MOUNTAIN 
2 eggplants, sliced in 1/4 inch round slices
2 yellow squash, sliced
1 zucchini, sliced
1 tomato, sliced
4 fresh mushrooms, sliced
1 onion, sliced
4 slices Muenster cheese
Salt
Pepper
Oregano or Italian seasoning
Garlic

Place 1 slice of raw eggplant per person on bottom of baking dish. Next place 1 or 2 slices yellow squash and zucchini, 1 slice tomato, slices of 1 mushroom, 1 slice of onion, and top with a slice of Muenster. Season each layer lightly with salt, pepper, oregano, garlic. Repeat three more times. Bake at 325 degrees to 350 degrees for 10 to 15 minutes.
