ZUCCHINI ROUNDS | |
1/3 c. Bisquick mix 1/4 c. grated Parmesan cheese 1/8 tsp. pepper 2 slightly beaten eggs 2 c. shredded zucchini 2 tsp. butter In mixing bowl, stir together Bisquick, cheese and pepper. Stir in beaten eggs until mixture is moistened. Fold in zucchini, melt butter in skillet. Use 2 teaspoons mixture for each round. Cook 2-3 minutes until each side is brown. |
