CROWNING GLORY VEGGIES 
16 oz. pkg. loose pack frozen mixed carrots, cauliflower, green beans, zucchini and butter beans
3 egg whites
1/4 tsp. salt
1/2 c. mayonnaise or salad dressing
1/4 c. (1 oz.) shredded Cheddar cheese
4 (10 oz.) custard cups

In medium saucepan, cook vegetables according to package directions. Drain and divide vegetables among the 4 custard cups.

In a small mixer bowl, beat egg whites and salt with an electric mixer on medium speed until stiff peaks form. Fold in mayonnaise or salad dressing. Spoon mayonnaise mixture on top of vegetables in custard cups. Sprinkle with Cheddar cheese. Bake, uncovered, at 350 degrees for 12-15 minutes or until egg white mixture is golden and vegetables are heated through. Makes 4 souffle-like side dishes.
