COTTAGE CHEESE PIE 
1 graham cracker pie shell
1 1/2 c. cottage cheese
1/2 lemon, rind and juice
1/2 c. sugar
3 eggs, separated

Strain cheese through ricer or colander until smooth; add sugar, egg yolks, then lemon rind and juice and then stiffly beaten white of one egg. Pour into crust. Bake 350 degrees for 15 minutes or until almost set. Cover with meringue and bake at 300 degrees for 15 minutes. Serves 6.
