BEET SALAD 
1 tbsp. gelatin, soften 5 minutes in 1/4 c. cold water
3/4 c. diced beets
1 can mandarin oranges
1/4 tsp. salt
3 tbsp. minced onions
1/4 c. vinegar or lemon juice

Drain juice from beets and oranges. Add water enough to make 1 1/4 cups liquid. Heat liquid to boiling. Add gelatin, salt, onions, and vinegar or lemon. Chill. When slightly set, fold in beets and oranges. Refrigerate until ready to serve.
