BEET GELATIN SALAD 
1 (3 oz.) pkg. lemon Jello
3/4 c. boiling water
3/4 c. beet juice, drained from can
3 tbsp. vinegar
1 (16 oz.) can beets, drained and chopped
1/2 tsp. salt
1 tbsp. grated onion

Add boiling water to Jello mix, stirring until dissolved. Add beet juice and vinegar. Chill until partially set, then add remaining ingredients. Pour into a slightly oiled mold. Chill in refrigerator until set.
