COTTAGE CHEESE GELATIN SALAD 
1 (3 oz.) pkg. (4 serving size) gelatin, regular or sugar free
1/3 - 1/2 c. boiling water
1 (20 oz.) can crushed pineapple, not drained
1 (16 oz.) carton cottage cheese
4 oz. whipped topping

Dissolve gelatin (any flavor) with the least amount of water as possible. HINT: Heat the bowl with hot water and discard before adding the measured water and gelatin. Mix pineapple and cottage cheese into gelatin; blend well. Fold in the whipped topping or low calorie package of whipped topping. Refrigerate.
